Sunshine, low humidity, blue skies. A perfect late August day to be in Westhampton enjoying the beach, some quick shopping in town and spending time with dear friends.
I love happy hours, and preparing an innovative martini along with tapas for friends. This time it was Figenza, a new fig flavored vodka, which I mixed with Chambord. I ice the martini glasses and shake the shaker up well, garnish with lime and serve.
Recipe:
Flatbreads are a craze now, so many varieties. I use Brooklyn Bred – All Natural Pizza Crust. 2 come in a package; they are lite, not too thick and not too thin. They are just right for flatbreads. I put them in the oven at 425 degrees and lightly toast both sides. The two flatbreads I made this time were:
Mozzarella & tomato with fresh basil
Gorgonzola with figs, prosciutto and red onion
After placing the ingredients on the crusts, place them back in the oven just to heat and melt the cheese. Then add imported prosciutto from Italy on top and some arugula, very lightly dressed with extra virgin olive oil and balsamic vinegar.
What could be better? A stroll along one of the most beautiful beaches during the day and then enjoying a serene sunset by the Bay while sipping a martini and indulging in a flatbread with friends. La Dolce Vita!!!
