IT'S GRILLING SEASON - SEARED TUNA & SWORDFISH


Ingredients:

1/2 lb of tuna per person (preferably sushi grade)

Sesame oil

Soy sauce

Fresh ginger

Scallions

Cilantro

Lime


Directions:

Marinade your tuna in sesame oil, soy sauce and fresh lime juice.

Dip the sides of the tuna in sesame seeds and black pepper.

Top the tuna with slices of fresh ginger, scallions and cilantro.

Refrigerate the tuna in the marinade for one hour or more.


Heat your grill to a high temperature, 500 degrees. Coat grill after it’s heated with a small amount of oil.

Sear each side for 1 minute. You want it to be seared on the outside and remain rare on the inside.


Slice and serve with wasabi, soy sauce, ginger and lime.


Tuna is a great summer healthy dinner and has become super popular.

They are catching tuna in Montauk and Block Island currently, so it should be plentiful on Long Island throughout the Summer months.

GRILLED SWORDFISH CALIFORNIA STYLE


Swordfish is rich in essential nutrients necessary for good health, including selenium and omega-3 fatty acids. Selenium is an essential trace mineral having a role in thyroid and bone metabolism, immunity, heart health, and male fertility. Swordfish is also a great source of vitamin D, a key vitamin for bone health that has also proven beneficial for immunity, heart health, and asthma. Omega-3 fatty acids found in swordfish may positively influence blood pressure and cholesterol levels. Because of the high content of mercury, it is not recommended to eat swordfish more than 1x per week or two weeks.


INGREDIENTS:

Swordfish steak – ½ lb per person, about 1 inch thick


Marinade:

Sesame Oil

Fresh ginger

Scallions

Cilantro

Lime Juice

Sesame seeds


Topping:

½ avocado

Tomatoes – grape or cherry, chopped

Cilantro

Red onion

Salt & pepper to taste


GRILL:

Marinade swordfish for about one hour

Dip sides in sesame seeds with pepper

Grill swordfish on medium heat, about 5 minutes on each side.

Plate and top with avocado and tomato mixture
