Who ever heard of a Walking Taco? Not me. One evening in late August, the night of the kids camp-out at Bay Crest beach in Huntington Bay, Long Island, I was introduced to this treat. A Bay Crest Association couple brought the concept back from Minneapolis, and I think this will become a staple item and favorite neighborhood event for many years to come. Nothing like trendsetters!
I did a little research. The walking taco, also known as a Frito boat, is a popular food item in the South, Midwest and Southwest areas of the U.S. It resembles a Mexican style casserole dish, but the offering this evening was the single-serve doritos type chip bag with the various ingredients. It was a fun, casual and simple preparation for our beach crowd. I can see this concept working very well at a sporting event, street fair, children’s party, outdoor amusement park or market. One may find this in California or even Tijuana, where they say Tostiloco or Doriloco.

Ground beef or chicken Lettuce
Shredded cheese Sour cream
Guacamole Beans
Tomato Small bags of Doritos
Just like a regular taco, there are variations and additions to this ingredients list, depending on your taste preferences.
Simply open a single bag of Doritos, fill with the ingredients of your choice.
Crush the chips at the bottom of the Doritos bag. Eat with a plastic fork while walking around chatting with friends and neighbors.
